KACHORI SABJI - KOLKATA'S FAVOURITE BREAKFAST.

CLUB KACHORI SABZI

One of the famous weekend breakfasts  from the City of Joy ( Kolkata )  is Club Kachori with Sabzi -  Fried Indian Bread with a spicy Potato Curry . I remember  in my childhood , my father used to take me to a  local  restaurant or vendor ( it's so common here that it can be  listed under street food )  that  sold the delicious Club kachori Sabzi.  The  kachori ( the fried Indian bread ) has a filling of urad dal(black gram) and is deep-fried and the spicy curry is made with potatoes  and chole (chickpeas). This delectable dish can  be consumed  for lunch or dinner as well . It  can be made at home in a few simple steps. 
I would love to share the recipe of this dish so that you can  try this delightful breakfast at home.

RECIPE:-

INGREDIENTS

For CLUB KACHORI:-

For CLUB KACHORI:-
•‌1 CUP FLOUR
•‌1/2 CUP SUJI(SEMOLINA)
•‌1/2 CUP URAD DAL(BLACK GRAM)(soak the urad dal for 3-4 hours, then blend it in the mixture adding ginger and chillies making a paste of it)
•‌1/2 tsp SALT
•‌1/2 tsp REFINED OIL
•‌2 CUPS OF WATER

For POTATO CURRY:-

•‌3-4 MEDIUM SIZE BOILED POTATOES
•‌HALF CUP BOILED CHOLE (Chickpeas)
•‌PUREE OF 2 TOMATOES
•‌1/2 tsp TURMERIC POWDER
•‌1tsp CORIANDER POWDER
•‌SALT TO TASTE                                                                                                              
•‌2 tbsp REFINED OIL
•‌1 tsp JEERA (Cumin seeds)
•‌1/2 tsp AMCHUR (mango powder)
•‌1 tsp RED CHILLI POWDER
•‌1 RED CHILLI
•‌1/4 MALAI (milk cream)
•‌1 tsp KASTURI METHI (fenugreek)
•‌1 tbsp GINGER GARLIC PASTE
•‌CORIANDER LEAVES
•‌PINCH OF HING (Asafoetida)
•‌1/2 tsp sauf (fennel)
•‌1/2 tsp GARAM MASALA

METHOD:-      

For KACHORI

In a bowl add all-purpose flour and suji (Semolina) add the salt, urad dal paste (black gram) and the oil and mix them all together then add water and make a dough. Then add 1/2 tsp of oil and give the dough a nice knead. After the dough is ready, cover the dough with a cloth and keep it aside for 30 minutes, Now take a frying pan and add 2 cups of oil and heat it at a low flame. Till the oil gets heated, take the dough and divide it into small sized balls. Then roll out those balls with a rolling pin (don't roll it too thin) then carefully put those kachori into the heated oil. Make sure that the heat is on the medium flame when you are frying. Take out those kachoris half cooked and fry it again on a high flame and flip it when you find the other side golden accordingly fry the other side and take those kachoris out on a tissue or newspaper to soak its extra oil.

For SABJI (Potato Curry)

Take a pan to add oil and heat it at a low flame when the oil gets warm add the red chilli, pinch of hing (asafoetida) ginger garlic paste in it, mix it well then add the tomato puree. Stir it then add all the spices, turmeric powder, coriander powder, garam masala, red chilli powder,sauf (fennel) and stir it well for 45-50 sec then add the milk cream mix it then add the boiled potatoes and chole(chickpeas) into the puree and add amchur(mango powder) salt and black pepper according to your taste. Mix it and add water to the curry. Cover the pan and simmer it for 3-4 minutes.
Your sabzi (potato curry) is ready.
Garnish it with some coriander leaves. Serve it hot with the Kachoris and ENJOY YOUR MEAL. You can also serve it with pickles.
