Frankie, also known as Kati roll is a famous street food originated in Kolkata, West Bengal. Initially, it was made by wrapping roasted kebabs but over the years many variants to this dish have been evolved, however, mainly it is spiced vegetables wrapped in a chapati or bread to which some tomato sauce and green chutney are added to embellish the flavour. So, check out this spicy street style recipe of Frankie(roll) and try this at home.
INGREDIENTS:-
FRANKIE MASALA:-
•1tbsp CHAT MASALA
•1/4 tbsp GARAM MASALA
•1/2 tbsp RED CHILLI POWDER
•1/2 tbsp TURMERIC POWDER
•1/2 tbsp CORIANDER POWDER
•1/4 tbsp JEERA POWDER
•1/4 tbsp BLACK PEPPER
FOR FRANKIE CHAPATI:-
•3/4 CUP WHEAT FLOUR
•3/4 CUP FLOUR
•1tbsp REFINED OIL
•WATER AS NEEDED
•SALT TO TASTE
FOR STUFFING:-
•1tbsp REFINED OIL
•CHOPPED GARLIC
•CRUSHED GINGER
•2 CHOPPED GREEN CHILLI
•3-4 BOILED MASHED POTATO
•1/2 tsp TURMERIC POWDER
•1/4 tsp CHILLI POWDER
•CORIANDER LEAVES
•1 tbsp FRANKIE MASALA
•SALT TO TASTE
METHOD:-
For making the Frankie masala, add all the masalas (spices) given above in a bowl and mix it well.
For making the dough for the chapati, add the wheat flour, all-purpose flour, oil and water in a bowl and make a dough out of it. Now cover it with a wet cloth and keep it aside for about 10 to 15 minutes.
FOR STUFFING:
For making Frankie stuffing, heat some oil in a pan and add the minced garlic and crushed ginger and saute it at a medium flame. Now add some turmeric powder, red chilli powder and the mashed potatoes and mix it well. Now add the Frankie masala and little salt because u have already added the Frankie masala which includes chat masala and mix it nicely. Now sprinkle some coriander leaves and leave it to cool down.
Now make chilli pickle which gives a spicy taste to the Frankie. For making it, in a bowl add 1/4 tbsp vinegar to which add 2 chopped green chillies and some salt and let it soak in for minimum half n hour. Now for the chapatis, make small balls from the dough and with a rolling pin make thin chapatis. Lightly cook the rotis till it gets golden brown spots. Again cook the rotis with some butter and oil at high flame. In the same pan add the potato mixture by making them into small cutlet shape, toast the masala.
After the masala is toasted, take a roti and spread the green chutney all over the roti and put the toasted potato on it, now top it with some sliced onions and cabbage and sprinkle some Frankie masala on it. Now add the chilli pickle on top. You can also add cheese or garlic chutney; it's totally according to your preference. Now roll the roti tightly, and wrap it half with a tissue paper or foil. Your delicious Frankie or Kati roll is ready to serve.
