KHAMAN DHOKLA - All the way from GUJARAT


Khaman Dhokla is a snack that is found in every nook and corner of Gujarat. Not only in the state of Gujarat, but in all other parts of country Khaman Dhokla is contemplated to be a popular choice of snack.  It is a savoury steamed cake made out of gram flour or chana dal. It has an exquisite texture and tempting flavour. It is very simple and flavorful. It is a type of snack which you can have any time when you are hungry. It is pretty easy and quick to make. Check out this recipe:-

INGREDIENTS:-

1 CUP GRAM FLOUR
1/2 tsp TURMERIC POWDER
1/2 tsp SALT
1/2 tsp SUGAR
WATER
1/2 tsp ENO (fruit salt)

FOR SYRUP:-
1 tsp OIL
2 tsp SUGAR
1/2 tsp SALT
1/2 CUP WATER
1/2 LEMON


METHOD:- 

In a bowl add the flour, salt, sugar, turmeric powder and mix it all together. Gradually pour the water into the bowl and mix it well to get a thick and creamy batter. Mix it well so that there are no lumps, it should be a nice flowing consistency; not too thin or too thick. Then let the batter sit for about 10 mins. In the meantime grease the cake tin with some oil. After 10 minutes add the Eno powder in the batter and give it a quick mix. As soon as you add Eno(fruit salt) you will see that the batter has taken up a nice foamy consistency, mix it well. Pour the prepared batter into the tin, and spread it evenly. Take a pot to add some water and let it boil and when the water is heated, put the tin gently on the stand, in the pot or pressure cooker and steam cook the batter for about 20 minutes at a medium-low flame. Prick the dhoklas with a toothpick to check if it's fully cooked. Then remove the tin and let it cool down.
FOR THE SYRUP:-
Heat some oil in a pan, add the mustard seeds and let it Splutter. Add some green chillies and curry leaves and reduce the flame to low. Add little water, sugar and salt and turn off the stove after a few minutes. Add lemon juice and some coriander leaves to the syrup and stir it well.
     Now cut the dhoklas into the cubes and pour the tempering ingredients on the dhoklas and let it soak. Finally, garnish the dhoklas with grated coconut and some coriander leaves. The dhokla is ready to be served.
