Potato wedges are a classic side made with unpeeled wedges of potato coated in a thick mixture of spices. They are often baked or either deep-fried. These wedges are very easy to make. This crispy snack has its own presence but dips like chili sauce, mayonnaise, or ketchup make it more delightful. Potato wedges are so much healthier than fries as they are baked. This is an instant recipe where you don't have to freeze the wedges. So let's get to the recipe!

INGREDIENTS
- 3-4 MEDIUM SIZE POTATO
- 1/2 CUP ALL PURPOSE FLOUR
- 1/4 CUP CORNFLOUR
- 1/4 CUP RICE FLOUR
- CORIANDER LEAVES
- 1 TSP MIXED HERBS/OREGANO
- 1/2 GARLIC POWDER
- 1/2 TSP RED CHILI FLAKES
- WATER AS REQUIRED FOR A BATTER
- SALT TO TASTE
- OIL
METHOD
Start by washing the potatoes to remove the dirt. Then cut each potato lengthwise into 2 parts. Then slice each part into 3 to 4 wedges. Basically, you will get 8 wedges from one potato. Then heat some water, add 2 tbsp of salt and boil the potatoes until it is partially cooked. Now for the batter of the wedges, in a bowl take all-purpose flour, cornflour, and rice flour. The combination of cornflour and rice flour ensures the crust to be crispy. Then spice it by adding garlic powder, oregano, chili flakes, few drops of oil, salt as per taste, and coriander leaves. Mix them all with adequate water to make a thin batter.
Now take the wedges coat them into the thin batter and place them on the baking tray. Meanwhile, preheat the oven at 220 degrees celsius for 10 minutes. Now bake the wedges for about 20 minutes. For an extra crispy finish turn the wedges halfway through baking. Serve fresh out of the oven and enjoy.
You can also deep fry the wedges if you don't have an oven. However, fried wedges are crispier in comparison to the baked ones. For frying, heat the oil, and when the oil is hot enough drop the coated wedges one by one, fry them on a medium-high flame until turned golden. Serve hot wedges with dips and enjoy!
